Pear Nectarine Coconut Oats

Yields: 1 serving
Heat the coconut milk in a small pot and stir in oats. Add pear and nectarine to pot. Stir frequently until oats appear to have absorbed all the liquid without letting the liquid boil and fruit is slightly softened. Mix in the flaxseeds (I saved half to top the oats!). Pull from stove, pour into bowl, and add toppings.
- 1/2 c. oats
- 1 c. coconut milk, unsweetened
- 1/2 ea. pear (chopped)
- 1/2 ea. nectarine (chopped)
- 1 handful blackberries
- 1 Tbsp. flaxseeds
- recommended toppings: sunflower seeds (1 Tbsp.), unsweetened shredded coconut (1 Tbsp.), cinnamon, remaining pear and nectarine
