Tropical Ginger Applesauce Granola

Yields: 2 pints
(adapted from Real Simple) 

  • 2 c. oats
  • 1/2 c. cashews, raw unsalted (chopped)
  • 1/4 c. sunflower seeds
  • 1/4 c. mango, dried unsweetened (diced)
  • 1/4 c. plums, dried unsweetened (diced)
  • 1/2 c. coconut, shredded unsweetened
  • 1-1/2 tsp. ginger, ground
  • 1/2 c. applesauce, unsweetened
  • 3 Tbsp. maple syrup

Combine the oats, cashews, sunflower seeds, dried fruit, coconut and ginger together in a bowl. Add applesauce and maple syrup and toss until fully coated.

Spread oat mix evenly on a baking sheet (I line mine with a Silpat). 

Bake ~60-80 minutes @ 275*F, stirring the oats every 20 minutes, or until golden brown.
